We enjoyed this with some roast salmon we had on hand. The recipe made one meal for my wife and me. As always, the goal was a delicious easy recipe that is low carb and low saturated fat. I think I hit the goal.
Ingredients
- 10 oz fresh spinach (baby spinach works well)
- 1 roasted red pepper, sliced into thin strips (jarred or homemade)
- 2 tbsp capers, rinsed and drained
- 1 tsp balsamic glaze (or more to taste, but watch the carbs!)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and freshly ground black pepper to taste
- Optional: A pinch of red pepper flakes for heat
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds to 1 minute.
- Add spinach in batches, stirring to wilt it evenly, about 3–4 minutes.
- Stir in roasted red peppers and capers, cooking for about 2 minutes to warm through.
- Drizzle balsamic glaze over the mixture and toss to combine.
- Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
