Low-Carb Smoky Shrimp and Brussels Sprout Bowl

This recipe balances bold flavor with simplicity. The Brussels sprouts make it low in net carbs and the smoky shrimp keep it low in saturated fats. That’s my idea of diabetic friendly. It was quick and easy to throw together, because I bought the Brussels Sprouts pre cleaned and halved. Done in 35 minutes!

Ingredients

  • 1 lb shrimp, peeled, and deveined
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil, divided (1 tbsp for Brussels sprouts, 1 tbsp for shrimp)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt, or to taste
  • Optional garnish: Lemon zest or a squeeze of lemon juice for brightness

Instructions

  1. Prep & Roast the Brussels Sprouts:
    • Preheat your oven to 425°F (220°C).
    • On a baking sheet, toss the halved Brussels sprouts with 1 tablespoon of olive oil, 1/2 teaspoon smoked paprika, and a pinch of salt and pepper.
    • Spread them out in a single layer, cut side down for optimal browning.
    • Roast for 20-25 minutes until the edges are crispy and caramelized, turning halfway through for even browning.
  2. Season & Cook the Shrimp:
    • In a bowl, toss the thawed shrimp with the remaining 1 tablespoon of olive oil, 1/2 teaspoon smoked paprika, garlic powder, and a pinch of salt and pepper.
    • Heat a nonstick skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side until they’re opaque and slightly caramelized.
  3. Assemble & Serve:
    • Serve the roasted Brussels sprouts alongside the spiced shrimp. If meal-prepping, store the shrimp and Brussels sprouts in separate containers to maintain texture until ready to eat.
    • Garnish with lemon zest or a squeeze of lemon juice if desired, which adds freshness without extra carbs.

Notes

  • 3 servings, per serving: Net Carbs: 8 grams, Fiber: 6 grams, Saturated Fat: 0.4 grams
  • Using pre cleaned precut Brussels sprouts is of course,, quicker than doing it yourself.
  • if you were defrosting frozen shrimp in a bowl, that is a handy place to mix the shrimp, oil, and seasonings.
  • it is the smoked paprika that makes this smoky shrimp and not just any shrimp.
