Diabetes-Friendly Sheet Pan Chicken with Butternut Squash and Mushrooms
Ingredients
- 1 lb Chicken tenders
- 2 cups Butternut squash peeled and cubed (1/2- to 1-inch pieces)
- 2 cups Mushrooms sliced
- 3 tbsp Olive oil
Seasonings:
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- 1 tsp Thyme
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- Optional: Crushed red pepper for heat
- Optional garnish: Fresh parsley or a squeeze of lemon
Instructions
- Preheat the oven: Set to 425°F (220°C). Line a large sheet pan with parchment paper for easy cleanup.
Prep the ingredients:
- Toss the butternut squash cubes in 1 tbsp of olive oil, a pinch of salt, pepper, and half the thyme. Spread them on one side of the sheet pan in a single layer.
- Toss the mushrooms with 1 tbsp olive oil, garlic powder, and a bit of smoked paprika. Arrange these on the sheet pan near the squash.
- Pat the chicken tenders dry with a paper towel. Rub them with the remaining olive oil and coat them with smoked paprika, thyme, salt, and pepper.
Assemble the sheet pan:
- Place the seasoned chicken tenders on the empty portion of the sheet pan. Ensure everything is in a single layer to promote even cooking.
Bake:
- Roast for 20-25 minutes, flipping the chicken tenders and tossing the veggies halfway through.
- The chicken is done when it reaches an internal temperature of 165°F (75°C). The butternut squash should be tender and lightly caramelized, and the mushrooms golden. You may need to clear the pan in stages if not everything is done at the same time.
