Ingredients
For the Chicken & Vegetables
- 2 lbs boneless skinless chicken breast (or thighs if preferred)
- 1 jar marinated artichoke hearts about 12 oz , drained
- 1 cup cherry tomatoes halved
- ½ cup red onion diced
- ¼ cup pitted olives e.g., green or kalamata, chopped
- 4 cups fresh spinach
For the Marinade/Sauce
- 2 Tbsp Dijon mustard
- 2 Tbsp dry white wine or low-sodium chicken broth
- 2 cloves garlic minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ tsp salt
- ¼ tsp black pepper
- 2–3 Tbsp extra-virgin olive oi
Instructions
Step 1: Marinate the Chicken
- In a bowl or a zip-top bag, whisk together Dijon mustard, white wine, garlic, thyme, rosemary, salt, pepper, and 2 Tbsp olive oil.
- Add the chicken, ensuring it’s well-coated. Marinate for at least 30 minutes (or overnight for deeper flavor).
Step 2: Sear the Chicken
- Preheat the oven to 400°F (200°C).
- Heat 1 Tbsp olive oil in a large oven-safe skillet over medium-high heat.
- Remove the chicken from the marinade (reserve any remaining marinade) and sear for 2–3 minutes per side until golden brown.
Step 3: Assemble & Bake
- Remove from heat and scatter the drained artichokes, cherry tomatoes, red onion, and olives around the chicken in the skillet (or transfer everything to a baking dish if needed).
- Pour the reserved marinade over the top.
- Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Step 4: Add Spinach & Serve
- Remove from the oven and immediately stir in fresh spinach, allowing it to wilt in the residual heat.
- Serve warm over cauliflower rice, zucchini noodles, or as is.
